Sweet and spicy Fiddlehead ferns

 Fiddleheads are the tightly coiled tips of ferns. These delicate delights are available only in early spring, when ferns grow their new shoots. They have a grassy, spring-like flavor with a touch of nuttiness . While choosing look for bright green specimens with tightly coiled tops. You want only 1 to 2 inches of stem attached. To use this rinse fiddleheads in several changes of cold water, removing any dirt or grit, before using.

Fiddleheads are delicate items that quickly loose their bright flavor and crisp texture.

Rich in Omega 3 and omega 6 fatty acids they contain fiber and iron as well .


Fiddleheads – 0.5 lbs

Chopped ginger – 2 tsp

Scallion 2 tbsp

Oyster sauce -3 tbsp

Canola oil – 3 tbsp

Sesame seeds toasted (white and black) – 2 tbsp

Red chilli with seeds- 1 no

Lemon juice – 1 tsp

Salt – 3 gms

Sugar – 5


Clean fiddle head and wash it .Let it dry and save it aside.
Take canola oil in pan.Add chopped ginger , red chilly and salute a bit.Now add rest of the ingredients except sesame seeds and let ti cook for 3 minutes .Now finish with lemon juice and toasted sesame seeds.
